Books GO-TO DISHES Part recipe book, part travel guide, and part encyclopedia of gastronomy, Signature Dishes That Matter tells the stories behind 240 culinary creations from more than 180 chefs. An international panel of award-winning food writers, critics, and editors was tasked with selecting the most influential dishes from across 30 countries, illustrated by chef and artist Adrian Rampazzo. Among those that made the final edit are the first-ever gelato, created in 1686, Baked Alaska, which dates back to 1867, Pork Buns, created by David Chang of New York’s Momofuku Noodle Bars in 2004, and Whole Turbot as served by London’s Brat from 2018.
