In the kitchen with… Daniel Humm

“Working at Claridge’s was one of the first things I did in my career, and as a result it has a very special place in my heart,” says Daniel Humm . The acclaimed chef’s career comes full circle this fall as he opens Davies and Brook at the London hotel, where he promises diners “casual refinement featuring cuisine inspired by my upbringing in Europe, my time in New York, and the incredible bounty of ingredients in the United Kingdom.” Humm’s Eleven Madison Park in New York topped the World’s 50 Best Restaurants list in 2017 and the chef says that while there will be the occasional nod to its cooking, he is keen for Davies and Brook to be “a regular meeting spot for Londoners in the way private members clubs are.” Incredibly, Humm’s relationship with Claridge’s began when he was just 15 years old, so he calls the opening “a real homecoming. It’s also my first time opening in Europe… I’m excited to take advantage of superb British produce.” Expect Davies and Brook to be on that 50 Best list very soon.
